Last week we decided to switch it up a bit and get the vegetarian Blue Apron box in addition to our biweekly meat box. The recipes just looked too delicious to pass up. Switching between the two box types is super easy. You just log into your account and change your delivery options before the weekly cutoff.
The recipes this past week were Cauliflower Steaks with Spinach Gratin & Green Beans, Black Bean & Red Quinoa Enchiladas with Salsa Verde, and Vegetable Pad Thai with Spicy Peanut Sauce.
The Cauliflower steaks were absolutely delicious. We’ve been cooking oven-roasted cauliflower a few times this fall and it’s been one of my favorite ways to prepare cauliflower. This version adds a spinach-cheese mixture on top that takes the whole recipe to the next level. The green beans were good as well but we’ve found the the Blue Apron recipes tend to use too much lemon or lime in their side salads. Since we followed the instructions, the beans turned out pretty sour. It was still my favorite recipe of the box.
Next we cooked the Enchiladas. This was probably my least favorite Blue Apron recipe to date. I’m not a huge fan of salsa and this one was very chunky. I think if I were to make this recipe again I would puree the salsa in the blender. The other thing about the salsa is that it turned out really sour, again because the recipe called for too much lime. Lastly, we didn’t realize that the tortillas would role more easily if we’d warm them up first. They crumbled and fell apart when we tried to assemble the enchiladas. All in all it turned into a bit of a mess. Yes, that’s a piece of tortilla sticking out of the cheese.
Lastly we made the Pad Thai. I didn’t actually think that I would like this recipe but I was dead wrong. The peanut sauce was super delicious with just a bit of kick from the sambal oelek. My only complaint is that I wish there had been some more tatsoi in the mix. Also, please excuse the messy plate :).
Overall, another successful Blue Apron box. I’m so happy that we’ve started to subscribe to this service. It’s been so convenient so the added cost is definitely worth it for us. You can sign up for Blue Apron here (not an affiliated link).
